Sunday ride
So... I almost forgot to tell you about Tony's bike ride! Here he is, just coming up to the finish. He did the 54 miles / 90 kilometres in about 3 hours and 40 minutes. Which is pretty darn good, I reckon. His goal was to get in under 4 hours and I daresay he did that with time to spare. ;-)
A few metres behind where I was standing the path takes a fairly sharp left turn in the exact spot where it crosses a small stream and on more than one occasion riders were surprised by this. One of them was very close to falling face first into the stream, but did manage to stay on dry land. Kinda dangerous for the riders, considering the speed some of them came the path - there really should have been signs warning them!Labels: love

In the little things, more
For six years, that has been the truth. Although we only got married 8 months ago, we might as well have tied the knot six years ago, because after the first 6 days we spent together I knew that 'this is it, he's the one'. And I have on pretty good authority that he felt the same way.
After six years we still don't take each other for granted. Maybe being together long distance for the first 2 and a bit years is the reason for that. I sometimes still feel so lucky that we get to sit down and have dinner together everyday or go to the library, or when he bakes bread at the weekend. Those little things were so rare before I moved here. And of course there (are) have been sacrifices involved with moving here, but they are all worth it. Because of the little things.
Also, saying 'I love you' when you're apart means a lot. But saying it when you are together is just as important. Even saying it in a silly way or with a funny voice (him) or by secretly dropping little notes into a bag (me.)

The night train is coming*
I didn't post this on Tuesday, but that was my lunch. It is Tony's first attempt at making the variety of Danish rundstykker called håndværkere. -Rundstykker are rolls you eat (usually) for breakfast. They are crispy on the outside and light and fluffy on the inside. Very nice. And not available to buy here in England.
They were very nice - even for lunch! But still not quite right. So last night he had another go. Much, much better. I mean, really, really yummy. Not exactly like the håndværkere you would get at a baker's in Denmark. No. They are better, in fact. Because, they are made by my husband and, let's face it, he's a genius when it comes to baking.
Tony's håndværkere /Danish breakfast rolls - makes 8
30 grams of fresh yeast
125 ml lukewarm milk
250 grams strong bread flour
80 grams of butter, softened (NOT melted!)
½ tbsp sugar
½ tsp salt
beaten egg, poppy seeds
= Sift the flour, sugar and salt together in a large bowl, then crumble in the butter to get a light and fluffy mixture (using your hands).
= Mix yeast and lukewarm milk, make sure the yeast is completely dissolved.
= Make a well in the middle of the flour mixture, pour in the milk and yeast mixture and fold it together to make a dough (starting with a spoon, finishing with your hands.)
= Knead on a lightly floured surface for about ten minutes until smooth and elastic.
= Put back into bowl, cower with cling film (but not tightly) and leave to rise in a warm place for about an hour.
= Once doubled in size, knead for another few minutes, then flatten the dough into a rectangular like shape, and cut into 8 equal pieces. (see my beautiful illustration below!)
= Place on grease proof paper on a baking sheet, leave to rise for 20 minutes.
= Brush the top of each with egg and sprinkle with poppy seeds.
= Bake for about 15 minutes at 225°C in the middle of the oven. You may have to bake them for a wee bit longer, depending on your oven. When they are done, they should be lightly golden and sound hollow when you tap them on the bottom.
They are nicest on the day of baking - straight out of the oven! But you can of course eat them the day after, just pop them in the oven for a little bit to make the outside crispy again.

This post has no pictures, but is rather lovey-dovey and also pretty long
Greetings from Denmark!
This morning I realised that there is only one month (exactly) to the wedding. Bloody hell that has gone by fast! And as my mum sits in the other room, working on my wedding dress (more about that when I get back to Denmark and can post pictures), I figure this is as good a time as any to tell the whole world how we actually met.
Also, it might be nice to have it in writing for when we are old and can't remember it any longer.
This is the short version: we met through the internet. This is probably still a bit weird for some people; how can you fall in love with someone you've never met? Well, I don't know, but that is what happened.
This is the long version: in the spring of 2002 I started frequenting the Star Wars online message boards. That was a lot of fun, chatting to lots of fellow Star Wars fans about SW and anything else between this galaxy and one that is far, far away. There are both topic specific threads and more general chat threads, one of them (Minions Required) was started by someone who called himself something shortened to CM (chaoticmass? chaosmaestro? cookiemonster?) and it was pure MAYHEM.
It moved very quickly (as a lot of threads did in those days - ah the memories) and it was crazy! So I didn't venture far into it, but some of the others persuaded me to use it, because they were. And so I did. And it was fun and crazy and chaotic. For a time, but then it became a bit too rowdy and some people got banned (oh dear, oh dear...) and the thread was eventually closed. So, someone started their own thing elsewhere and we played there and people started to become friends. Chatting on MSN Messenger and the like. Tony and I were among them. This went on for a few months.
Then, one weekend in May 2003, he didn't come online at all. Which was kinda strange. But stranger still was the way I felt about his absence. Which was not good. I missed him terribly and by Saturday evening I realised that "hey, I think I'm in love with this guy that I have never met!" I remember thinking words to that exact effect while watching Terminator on a Swedish channel (strange the things that become lodged in your memory, eh?)
So I decided that something must be done and that Monday I waited impatiently for him to appear. I told him "we need to talk!" and we did. Luckily, luckily, the feeling was mutual and 3 weeks later he came over to visit me. We spent a beautiful week together and by the time he flew back to England we both knew that that was it. We belonged together.
In fact, that first day when he came over, we had a picnic in a park in Århus and as we walked away from there, he took my hand and said "I'm never letting you go" (in a romantic way, not a creepy internet-stalker kinda way!) and he never has. Lucky me. :-)
Then, for 2½ years we were together but apart in England and Denmark. Which was really tough. It absolutely sucks when you can't be properly together, but have to rely on emails and phone calls + plus whatever actual time together you can afford. But we made it. Long distance relationships can work. But you have to work for it. And in a way I think it was good. Because we had to communicate, you know. We couldn't rely on body language and things like that. If only the time apart hadn't been as long as it was.
He is the most amazing guy in the world. So funny and smart. He has great taste in many, many things. He picks me up when I'm down and pokes fun of me in the most infuriating way that I can't help laugh at him even when it really, REALLY annoys me. The most amazing thing about him, though, is how he has become more amazing over the years I have known him. I love getting to know him better and better.
I can't wait to spend the rest of my life getting to know him even better. And right now I can't wait to see him later tonight.
Well... I think that's about as much lovey-doveyness as you can take..? ;-)Labels: love

To the awesomest dude in the world
It's my sweet Tony's birthday today! We've had a very quiet day, just the two of us. Tony's family is away on holiday - how they managed to forget that he's actually 30 this year is a little beyond me. But never mind, we had the surprise bash for him last weekend. I think that makes up for it...
We went and had a nice meal together at lunch time, came back and this afternoon Tony has been to see the new Batman film. Alone. Because it ain't my kind of thing. I have the scaredy cat threshold of a four year old - and heck, even some of them are braver than me! ;-)
The last couple of days Tony has been busy in the kitchen baking cakes to take to work. Brownies, muffins, ginger biscuits and lemon cake. The lemon cake was a trial of one we were going to make for the wedding, but it turned out not so nice. So we're definitely not having that! But all those cakes are the proof just how sweet my Tony is; most other people would just have brought in whatever cakes were on offer in Tesco...

He bakes my breath away
Have I mentioned recently how amazing my Tony is? No? Well, he is. On Sunday I was feeling a bit under the weather. A stomach bug perhaps... My tummy was not feeling too happy and Tony said to me "what you need are some ginger biscuits!" Apparently, that helps an upset stomach... Well, we didn't have any ginger biscuits, and the shops were closed so none were to be had.
But then. What did Tony do? He offered to make some! I declined at first, "that's too much trouble". But after he asked me the third time, well, how could I not let him make some cookies to make me feel better?
And he did and they were delicious. Although I'm not sure they helped any. Apart from the fact that they made me feel like the luckiest gal in the whole world for having such an amazingly awesome sweet boyfriend.
So. Now you know how awesome he is. ;-)Labels: love

Tony's big heart
This was lunch. Leftovers from dinner last night and a home made roll. Simple as can be. :-)
Ok, my sweet Tony needs your help! He's been bitten by the bicycle bug and is doing a charity bike ride next month. And seeing as it's for charity, he needs some sponsors! The bike ride is Hearts First Bike Ride - London to Southend 2008 and it supports the British Heart Foundation. A very noble cause indeed. So, if you feel like sponsoring him (as much or as little as you can afford), follow this link. Tony will be very grateful for your support. And I'm terribly proud of him! Hot and humid
This is the Green House at the Botanical Gardens in Århus. We will very likely be doing our wedding photos there.
Because it offers both an indoors and outdoors option. We're of course keeping our fingers crossed for nice weather, but you never know.
So although the Gardens are lovely and our first choice (especially that pretty white bridge!), it's nice to know that there is a waterproof alternative.
And I suspect that, even if it turns out to be lovely weather, we might still go inside the Green House and take a few pictures.
It is very beautiful and interesting in there. I love foliage. But you knew that.
And what about this interesting chap? Also, there are butterflies flying freely in one of the sections.
However, there is one little downside to the Green House; parts of it is tropical or subtropical and that means hot and humid. How comfortable is that going to be in dresses and suits, eh?

PS: How friggin' sweet is my Tony? Last night after he had read my sentimental bread post from the other day, he went on a search for a recipe for birkes (Danish breakfast roll) and said "if we succeed in making these, we can make them for breakfast every Saturday. He totally rocks!

I love how Tony embraces some Danish traditions. Like when we got engaged (oh, how that phrase makes me groan; I can not refer to Tony as my fiancé. I just can't. But I digress.), he got a ring too. We wear them on our left hands and then when we get married, we'll swap them to our right hands. I will have only the one ring (as will he). For a little while I wasn't sure that I liked the fact that our rings are different. But then I realised that they are no less symbolic than if they had been the same design. We go together so well exactly because we are not the same.
So there we have it: Tony's long and slim hand with my short and chubby hand (with crazy colour nail varnish, oi). It's actually kinda funny; our rings are the same size! Same but different. It's been five years already. Here's to another 50 of same-y differentness. At least. Love you.
PS: In case you're curious about Tony's ring, it's a copy of a ring from Roman Iron Age found in Denmark. Labels: love

Random things on a Tuesday
This is my birthday card from Tony. He drew it himself! Isn't he awesome? I really wish he would do more drawing, he's so good at it. Although he claims that he can only draw from pictures. Such rubbish! I'm sure he could be an amazing draw-er from real life if he just gave it a try. :-)
This is my inspiration board. It's on the wall behind my computer monitor. It's looked pretty much the same for about a year. Maybe it's time to change it around a bit... If you fancy have a look at the picture with lots of notes over on Flickr.

This is my birthday card from Tony. He drew it himself! Isn't he awesome? I really wish he would do more drawing, he's so good at it. Although he claims that he can only draw from pictures. Such rubbish! I'm sure he could be an amazing draw-er from real life if he just gave it a try. :-)
This is my inspiration board. It's on the wall behind my computer monitor. It's looked pretty much the same for about a year. Maybe it's time to change it around a bit... Book, love, yarn
This is what I'm crocheting at the moment. A baby blanket, just because they are so relaxing to make- no thinking required. Apart from keeping track of what colour to use next and how many rows to do of it! I don't know anyone having babies in the immediate future, so I'll probably put it up for sale on Etsy, once it's finished.
And I'm reading Body and Soul by Anita Roddick. It is a very interesting read. Although some bits annoy me a little bit, but I can't quite put my finger on why...
Roses from my sweet Tony. Did I ever mention what a swell guy he is? Not only does he surprise me with flowers, he also does the dishes (without grumbling too much) while I'm doing some other stuff. I sometimes think he's the one who deserves the flowers, but I suspect he would decline...
