Tony's yummy scrummy pale brownies

If you've been reading the blog for a little while you have surely noticed that my dear husband is quite the baker, bread and cakes (oh! the cakes!). Here is a new recipe he came up with for a different kind of brownies. They are sooo yummy. Gooey, but not too much, just the right yummy amount.

Ingredients:
115 grams softened butter
100 grams milk cooking chocolate
170 grams caster sugar
100 grams plain flour
2 large eggs
2 tea spoons vanilla extract
1 tea spoon baking powder

Preheat oven to 180°C.

Grease cake tin and line with grease proof paper. Melt the chocolate.

In a bowl, cream together the butter and sugar until pale and fluffy. Beat in eggs one at a time. Add vanilla extract and melted chocolate. Add flour and baking powder (sieve if you want), mix well.

Pour into cake tin and bake for 35-40 minutes. Prod with skewer to check it's baked all the way through. Leave to cool and dust with icing sugar if you feel like it. Cut into squares and enjoy! With a cup of tea, Tony would probably say! ;-)

We spend our days off baking

I made the first batch of Christmas cookies. 'Jødekager', "Jewish cakes". The names seems to come from the fact that they have a mix of sugar and cinnamon on them. I guess the cinnamon was seen as a typical Jewish / Middle Eastern spice in the olden days.

Tony made a very tasty bread with spelt flour (if you can get your hands on some of this flour, do so, it has the most amazing flavour!). The dough raised rather a lot and the bread ended up looking quite funny. It was begging for a face! ;-)

Don't worry, I didn't literally draw a face on the bread!

The night train is coming*

I didn't post this on Tuesday, but that was my lunch. It is Tony's first attempt at making the variety of Danish rundstykker called håndværkere. -Rundstykker are rolls you eat (usually) for breakfast. They are crispy on the outside and light and fluffy on the inside. Very nice. And not available to buy here in England.

They were very nice - even for lunch! But still not quite right. So last night he had another go. Much, much better. I mean, really, really yummy. Not exactly like the håndværkere you would get at a baker's in Denmark. No. They are better, in fact. Because, they are made by my husband and, let's face it, he's a genius when it comes to baking.

Tony's håndværkere /Danish breakfast rolls - makes 8

30 grams of fresh yeast
125 ml lukewarm milk
250 grams strong bread flour
80 grams of butter, softened (NOT melted!)
½ tbsp sugar
½ tsp salt

beaten egg, poppy seeds

= Sift the flour, sugar and salt together in a large bowl, then crumble in the butter to get a light and fluffy mixture (using your hands).
= Mix yeast and lukewarm milk, make sure the yeast is completely dissolved.
= Make a well in the middle of the flour mixture, pour in the milk and yeast mixture and fold it together to make a dough (starting with a spoon, finishing with your hands.)
= Knead on a lightly floured surface for about ten minutes until smooth and elastic.
= Put back into bowl, cower with cling film (but not tightly) and leave to rise in a warm place for about an hour.
= Once doubled in size, knead for another few minutes, then flatten the dough into a rectangular like shape, and cut into 8 equal pieces. (see my beautiful illustration below!)
= Place on grease proof paper on a baking sheet, leave to rise for 20 minutes.
= Brush the top of each with egg and sprinkle with poppy seeds.
= Bake for about 15 minutes at 225°C in the middle of the oven. You may have to bake them for a wee bit longer, depending on your oven. When they are done, they should be lightly golden and sound hollow when you tap them on the bottom.

They are nicest on the day of baking - straight out of the oven! But you can of course eat them the day after, just pop them in the oven for a little bit to make the outside crispy again.

Rising baking standards

And just as you thought this blog had decided to deal only with our wedding (3 weeks ago today!) and related matters, here's a batch of baking to prove the opposite.

But I am not the bread maker in this instance, Tony is! And that is a novelty, because his usual domain has been cakes. He is branching out from the sweet stuff to the more savoury stuff. I love some nice bread. Yum! Although, these did not turn out too well. The dough didn't rise properly and the toasted sesame seeds made it taste very salty. Not a happy bread experience, sadly!

However, he got himself a baking book yesterday so there will be more bread in the future I have no doubt. And hopefully, the dough rising troubles are solved as we now have live yeast. I've lived in England for three years and never before have I had such a thing in my possession! In Denmark you can buy it in most supermarkets without any difficult or having to search for it.

But here you have to ask a baker to give you live yeast. This is what you must do to get some live yeast! And he (or she) must give it to you! Apparently, superstition says that if they don't, they risk that their next dough will not rise properly. The guy (at Tesco) didn't bat an eyelid when we asked for some live yeast, he just got a bag and gave us about 50 grams. For free. We'll try some other supermarkets too, to see which ones will hand over the yeast. :-)

I can't wait to make some bread and a pizza with proper yeast!

Buns in the oven

No. Not that kind of bun! As you know from many posts, Tony bakes yummy cakes. I don't so much. I prefer to bake bread. There's just something so homey about seeing the yeast work, kneading the dough, seeing it rise and then sinking your teeth into the final result. So good! And I especially love baking bread in the morning. I don't know why. But it sure is a nice way to start the day.

These are pumpkin seed rolls and to make them you'll need:
1oo ml (whole) pumpkin seeds, 3 sachets (7gram ones) of dry yeast, 2 spoonfuls sugar, 350 ml warm water*, 450-70 grams flour, 100 grams pasta or durum flour (I use pasta flour from Dove Farm), half a spoonful salt, ½ teaspoon olive oil.

*I find the best way to get the right temperature is to mix 250 ml cold/tap water with 350 ml boiling water and then take your water from this.

Put your pumpkin seeds in a pyrex bowl or similar, cover with boiling water and leave for an hour. Pour out the water, then chop the seeds as finely as you like.

Mix the yeast and sugar in a bowl and then add 100 ml of your warm water, stir and leave for five minutes. You should then see the yeast start to work. Add the rest of the water, 400 grams flour and the pasta flour, pumpkin seeds and salt. Mix the dough, adding more of the flour as you go. The dough has to be exactly not sticky, but not too heavy. Pour the olive oil into your bowl and roll the dough in it, so it's lightly oily. Cover your bowl with cling film and leave the dough in a warm place for 30 minutes.

Lightly dust your baking tray (you'll need two if you have a small oven like we do) with pasta flour. Divide the dough into 14-16 portions, shape into slightly flat rolls (they will rise in the oven), bake for 15-17 minutes mid-oven at 180°C.

He's the cake monster too

Look what Tony made the other day! Roulade! A cake similar to a Swiss roll. It is yummy! It's a Danish recipe; in fact it's the very recipe that my mum has always used. And I'm very proud to say that Tony's first go at making it is almost as good as my mum's. I think she would be proud too. :-)

He loves my cookies

I've been making lots of Christmas cookies the last two days. And when I say lots I really mean LOTS! Many hours have been spent in that kitchen by me. And there's still another batch to be made... Tony mostly helps by eating cookies - he IS the cookie monster after all! ;-)

But I have had time for a wee bit of crochet in between. To be honest, I wouldn't mind sitting on my butt all day long crocheting baby blankets. I wonder if there's a living to be made from that?!

This afternoon we watched Shrek the Third. Hmmm... not overly impressed. I think we're both glad we didn't go see it at the cinema.

Pumpkin seeds in my bread

Chopped pumpkin seeds and herbs de Provence look pretty on top of the contents of a bag of ciabatta bread mix. Mixed with lukewarm water you can make these yummy rolls.

Brownies and elephants

Tony made brownies the other day. Like his muffins, they are yummy. I mean like, REALLY yummy! We may have wildly different tastes when it comes to food, but in the baking department they are similar and he does baking very well!

And here are a couple of things I'm working on for PlushYou... aren't those elephants just the cutest?! The deadline is mid-September, but to make sure that they get there in time, I've set my own deadline: must be finished before we go to Denmark. Which is in 19 days. Do you think I'm excited?! ;-)

Man-made muffins!

The other day T said "maybe I'll try making muffins". He NEVER bakes, the one time I 'forced' him to help me bake bread, he wasn't happy at all. Maybe because it requires actually kneading the dough? So imagine my surprise!

Anyway, today we picked up a few supplies and after lunch he got on with it. And they are rather yummy. And he made them all by himself; my only contributions were chopping the chocolate and sprinkling a wee bit on top.

My guy can bake - I'm so lucky!
