Easy vegetable dish

I've been doing this dish a lot recently, it's quick and easy to make and absolutely yummy.

You will need some vegetables. I've used carrots, peppers and tomatoes. Sometimes I've added a potato or two. How many vegetables you'll need depends entirely on how hungry you are, what you're having with the dish, how many you're making it for etc and so forth. Usually I've been using 3 carrots, 1 pepper and 1 or 2 tomatoes when I'm making it for myself. You know you need lots of fruit and veg every day - this is my way of squeezing in as many as I can! ;-)

Anyway, you've got your veg ready, now chop them into square-ish chunks that are sort of 3/4 of an inch each side. Put all the vegetables into an oven-proof dish. Sprinkle some thyme, basil, paprika and oregano on the vegetables. Finally, drizzle a bit of olive oil over them.

Stick it in the oven for about 30 minutes (40 mins. if you added potatoes) at 200°C and the dish is done!
