I made these cookies the other day.

They are traditional Danish Christmas cookies called 'brunkager', which means "brown cakes". Because they turn brown once baked.

The reason they do that, is that there's sirup in them. Along with some spices that for me are inextricably linked to Christmas: cloves, cardamom and cinnamon.

I wasn't entirely sure how they'd turn out because we don't have any scales, so I couldn't measure things correctly.

And the recipe calls for ground cardamom, but I could only find the seeds/pods/whatever they are called. So I didn't know exactly how much I had to use.

But they turned out alright. T sure seems to be happy to gobble them down, and his parents like them too!

Even his co-workers liked them, so much that his boss has asked for the recipe!

Edit 10/12/05: I see that quite a few people end up here by searching for a recipe for brunkager, well look no further: recipe for brunkager (in English, the measurements are metric).
